Ingredients:
- Pasta or spaghetti (I used gluten free pasta)
- Tomato pesto
- Kalamata olives
- Tomatoes/cherry tomatoes
- One zucchini.
- Half a head of a broccoli
- Rocket (as much as you want)
- Olive and rice bran oil
Method:
Step 1: Cut up the veggies and olives and separate them into piles of each veggie ready to be placed in the pan.
Step 2: Boil a large pot of water ready to cook the pasta. Add the pasta during preparation, depending how long it takes to cook. Meanwhile pour some oil into the pan and wait until heated. Place the broccoli into the pan and cook until slightly soft.
Step 4: Now add the zucchini to the pan and continue to cook.
